Splitting expenses on a weekend away

Why 'taking turns' fails over two days
Taking turns only works when there are enough expenses for the randomness to even out. Across a weekend there are maybe fifteen, and they are wildly different sizes: whoever picked up Saturday's dinner spent ten times what the person buying Sunday's pastries did.

Settling up on Sunday evening
Do the calculation before you split up, not three days later. Everyone is still together, memories are fresh, and a missing entry is fixed with one sentence. An instant transfer takes thirty seconds from the car or the station platform.
If the group meets often, leaving the balance open until the next outing is a reasonable choice — provided it is written down somewhere, and not only in the head of the person who fronted the most.

Should everything be shared, even Friday's drinks?
If the group drinks it together, yes — treating it as an exception is more work than sharing it. Anything one person buys for themselves, like a souvenir or a solo coffee, stays personal and never enters the shared accounts.
What about the person who booked the cottage three months ago?
Their booking is a weekend expense like any other, just paid earlier. Log it at its real amount with the right participants. It is what can explain that person ending up heavily in credit.
Is it really worth counting over two days?
A weekend for five can pass £500 in total, so roughly £100 a head. That is not trivial, and it is exactly the format where people pay 'in turns' without ever checking that the turns balance out.
